Best festival in Jamaica? Chef Rose of St. Elizabeth/Westmoreland

While talking to the resident ‘vibes man’ Steve, I couldn’t help but notice that everyone was passing me with a festival in their hand. So I looked at Steve and asked, “where are they coming from with those festivals in brown paper bags?” With a slight look of astonishment on his face he replied, “oh bossy mi neva tell you bout di festival dem?”

He then pointed me in the direction of Rose, who was kneading another batch of festival mixture and is located next to Coolie man. Using both hands to ensure the mixture has a consistent paste, she glanced at me and asked, “how can I help you nice gentleman?”

I got straight to the point and asked, what made her festivals so special, because I knew my kareemsquest.com readers would want to know. “I don’t buy any premixed product, I make mine from scratch, plus I use very little oil and no butter.” After this explanation I was eager to try one, so I stood and watched attentively as she placed another batch in the frying pan.

When I finally got one, the dough was airy and soft with a hint of sweetness.
